Rocket is delicious in salads, pesto ; sandwich adding a distinctive peppery flavour.

Store rocket in a loosely wrapped plastic bag, at the bottom of the fridge.

Recipe Rocket Pesto

INSTRUCTIONS

2 cups packed arugula

1 cup extra-virgin olive oil

1/2 cup finely grated pecorino

1/2 cup finely grated parmesan

1/3 cup cashew nuts

1 tbsp. lime zest

1 clove garlic, chopped

Kosher salt and freshly ground black pepper, to taste

INSTRUCTIONS

Process arugula, oil, pecorino, parmesan, nuts, zest, and garlic in a food processor until finely chopped; season with salt and pepper.
