Hello!
My name is Peer and I am a 25 year old chef from Hamburg, Germany.
I have a deep passion for sustainable food practices and farm to table concepts.
My teaching grounds were Restaurants de KAS (best vegetable Restaurant 2023 worldwide), Restaurant 100/200 (2 Michelin Stars, 1 Green Star) besides many others that taught me how to look of food from a different perspective.
I am currently based in the Netherlands where I study International Food & Agribusiness and work part-time as Chef de Partie (CDP) in an innovative plant focused restaurant, called Pollevie. Additionally I am working on different culinary projects and want to continue to push gastronomy and the agri-food sector towards a more sustainable future.
Chef Baskets
Cooking starts for me at the source of the ingredients. Smell, aroma, colour, shape and texture all depend on an ingredient surrounding. In this case the Island Organics Bali farm in the Bali highlands or how I like to call it: ”Chef`s (wet) dreams on 24 acres." For me coming from a culinary background where I had the chance to work with many amazing chefs around the globe to combine my skills with the holistic approach of my study and over 250 organically grown species has been a true blessing. The fun I had creating those dishes and all the amazing people I met from the Island Organics Bali network will stay with me and made this project possible. I am truly grateful for that experience and want to thank the Island Organics Bali team and especially Rama, Blair, Kania and Jason, who did an amazing job on these pictures.
