Psophocarpus tetragonolobus

Named after the distinctive “wings” running along its pods, winged bean is a tropical legume with a fresh, crisp texture and a mild, slightly nutty flavour.

Every part of this plants are actually edible, from its leaves and flowers to its seeds, roots, and pods. We harvest the young, tender pods, which can be enjoyed raw or cooked while they are still crisp.

In Bali, winged bean is commonly known as kecipir/ kelongkang and often finds its way into urap - lightly cooked pods are mixed with seasoned grated coconut and other vegetables! 

Crunchy, fresh, and very much at home on a Balinese plate.
